You’re Doing Great Gang!

I never made it to the gym. I just couldn’t get myself to drive there. Instead I did 8 minute abs and some total body circuits. The 8 minute abs was hilarious, it is so old but such a classic..

Try out 8 min abs and feel the burn!

I threw together a great dinner and it was so simple. I had chicken on the stove with some salt and pepper, sweet potato chips that I roasted in the oven for 30 minutes with a little olive oil and brussel sprouts. I have never made Brussels Sprouts so I looked up an easy, healthy recipe from Heidi at 101 cookbook.


I put a tablespoon of Romano cheese on top of the brussel sprouts right before I turned the heat off.


What a colorful meal!

Texas Roadhouse

Some days you just gotta go to the Texas Roadhouse!!


Yesterday was a long day for Vinnie so we went out to dinner to get out of the house, cheer him up and move on. I have to admit a big chain restaurant is not my first pick when I want to go out to dinner, but it was an experience.

Let me show you…

When you walk in there is a display of all the freshly cut, never frozen steaks. Right then you can choose which one you want and they will cook it for you.


And then there is the bread… it is lathered in butter (as is everything there), fresh out of the oven every 5 – 10 minutes and it comes with this cinnamon butter to spread.



The butter was so smooth and sweet and creamy! I only had half of one because I knew it was going to be a long, greasy dinner and I wanted to save myself for the real food. Plus, the butter was almost too sweet for me. I like bread to taste like bread!


Since it was our first time to the Texas Roadhouse they brought us a complimentary starter sampler. It had their pulled pork, chili, baked beans, green beans with bacon. The two sauces are their specialty gravies – white and brown. It was all good, and the sampler was all I needed.


I almost forgot about the peanuts. These saved me. They may be calorically high but at least  they are relatively healthy. I mainly snacked on the peanuts while Vinnie munched on the bread!


For dinner Vinnie and I shared this big meal! I don’t even remember the name of it, but it was a giant steak, shrimp and an overloaded potato. Vinnie saw the picture on the menu and had to have it! It looked exactly the same when it came to the table -that never happens!


You can see the grease glistening in the picture– eek!


I also got a house salad which came with a hardboiled egg which was a nice touch of protein. I had honey mustard dressing on the side so I could control how much was put on.


Oh and the big meal came with a Chili to start. The chili was buried under the heaping pile of cheese and onions.

Ok – so not the healthiest meal ever. But, it was a really fun night and a great experience. The waitresses were so nice. They were playing music and dancing all around the restaurant; I never actually figured out what that was all about. I swear the manager came and checked on us like a million times. It’s nice to know they want you to enjoy your dining experience.

Needless to say, this morning, I am feeling the effects. My stomach is not happy with me. I am sipping on some Celestial Seasonings Peppermint tea and chugging water to hopefully settle my stomach. I had some stuff to do at work this morning, so I am hoping to get a mid-morning workout in.

Friday Food Fest

Gosh today is flying by. I planned to go to the gym 2 hours ago but I haven’t been able to get away from the computer. I will go, at some point today! But I thought in the mean time I would do a quick post about what my meals so far today.

For Breakfast I had some delicious Cabot Cheese with sunflower seeds and Smuckers Strawberry Jam. I also had a shiny apple on and Green Mountain Coffee Breakfast Blend. I was ready for work!

The cottage cheese kept me full for a really long time. I snacked on almonds and another apple later in the morning because it was there! I do love this snack though, it always satisfies and holds me over until the next meal.

For lunch, I had a sandwich. I love sandwiches, but I never make them. They are so simple and easy, I need to eat them more. This sandwich has multi-grain bread, provolone cheese, turkey, a big leaf of lettuce, onion and some spicy brown mustard.

Ok – Now I have to go back to work.

4 Tips to Stay Motivated

This time of year it is really hard to stay motivated to eat well and workout. The days are shorter, the weather is colder, and the stress of the holiday season approaching is mounting. I have been dealing with this first hand all week. Even when I get to the gym, my normal workouts feel like a burden and at night I feel lethargic and don’t want to cook – or do anything for that matter.

But, it is important to remind yourself to stay on track, go to the gym and eat healthy balanced meals.

  1. Breathe – I know it sounds funny, but if working out seems totally out of the question take a couple minutes to breathe. It helps ease your nerves, settle the stress and bring you back to center. Instead of doing a hard charging strength workout do something more zen. I find doing Yoga or Pilates helps me relax and be in the moment. If I do a half hour of this, I feel more ready for the day, work or even the rest of my workout.
  2. Just start – Sometimes the act of doing gets you motivated. Start a recipe that you have been dying to make lately, or go outside and start walking. Usually once you start the action, you will remember why you enjoy it and forget all the negative thoughts you were having beforehand.
  3. Switch it up – Do a different workout routine than normal. Switch it up. Part of the reason you are feeling unmotivated is because you know exactly what to expect and have a good idea how it will feel. Don’t do the same thing as always. Flip through a health magazine and pick a workout they have provided. Most likely it will be fun and different and you will be guessing what comes next.
  4. Get your heart rate up – The motivation to exercise and work hard can sometimes be lost, even if you do get yourself to the gym. A quick fix is to get your heart rate up – do intervals! I know, I know, when you are feeling lazy that’ is the last thing you want to do but… it works, I swear. Alternate walking for 1 minute and running 1 minute. Once you start to sweat, you will be motivated to keep sweating and the intervals make the workout go by quick. Another bonus is intervals burn more calories in a shorter amount of time, so you can get in and out of the gym sooner.

I hope these tips help! I keep telling them to myself, I even did two of them this morning.

Morning Workout

I was feeling sluggish this morning, but I managed to get up and to the gym. I hopped on the elliptical but was not feeling it, at all. Usually I can get into a magazine or my music and the time flies. Not today. So, I decided to do a Pilates and found a workout on Blogilates using my iPhone. It was perfect. I got a great lower body an ab workout in and felt so much more relaxed.

Afterwards I still wanted to get some cardio in so I thought I would try out a quick interval run on the treadmill and see how I  would feel. My workout is below. After the first 5 minutes, I was feeling great, totally into the workout, and had completely forgotten about the rough start on the elliptical.

So remember to breath and never give up because there are always ways you can get motivated!

My Fitness Pal

It is only Tuesday but this week has been hard for me to eat well and not snack (my biggest challenge). I think I haven’t been eating enough so I just constantly feel hungry, but then again, I have been eating 1200 calories a day which should be enough especially since I am trying to trim down a bit. To keep track of my intake I use www.myfitnesspal.com, which is great. Even though I try to be very diligent about tracking my food, I nearly almost always forget to track  on the weekends which is when I snack and eat unhealthy the most and sometimes I purposely omit things I ate because I do not want to admit I actually ate it.  I need to be honest with myself before I can ever hope to be at a happy weight. Hmm… that just came to me, but it is so true. Interesting…

Last night, when Vinnie and I went grocery shopping we bought a big steak and marinated it overnight so it would be extra delicious tonight. We covered it in soy sauce, garlic and maple syrup for 24 hours. It looked kind of gross (actually too gross to post!), but the marinade was so good. We grilled up the steak for about 7 min. a side – the steak was so juicy and flavorful.



We also had roasted red potatoes which are so easy to make and a healthy carb to add to a meal.


Roasted Rosemary Potatoes002

3 Red Potatoes cut into cubes

1/2 tbsp of EVOO

1  tbsp of Rosemary or a palm full

salt and pepper to taste

roast for 30 mins or until soft

I also made a simple salad to add some greens to the mix.


Overall it was a pretty good dinner and I had enough leftover for lunch tomorrow. Now it is time to relax on the couch with my favorite mug full of hot chocolate for dessert.

I love following Blogilates. Cassey shared one of her Powerflex class workouts the other day and I wanted to give it a try this morning.

1 min: feet together, hop side to side
1 min: high knees with hands behind your head
1 min: mud runs
1 min: plié squats
1 min: plié squats with heels up!

1. regular bicep curls, 3 sets of 15 (8 lbs weights) – right leg back on step, lunge and hold as you do your curls. only rest between sets. * I started with heavier weights but you do so many sets, I had to go down to 8 lbs and I also am trying to tone up no bulk up!
2. bicep curls with arms slightly turned out from your body, 3 sets of 15 (8 lbs weights) – left leg back on step, lunge and hold as you do your curls. only rest between sets.
3. hammer curls, 3 sets of 15 (8 lbs weights) – stand feet hip width apart
4. tricep dips 1 set of 20 – legs outstretched
5. tricep kickbacks while in slow skiing or chair position, 3 sets of 15 (5 lbs weight)

CARDIO: 1 min mountain climbers!

1. lie on step, chest flies, 3 sets of 15 (12 lb weights)
2. lie on step, chest presses, 3 sets of 15 (12 lb weights)

CARDIO: Get in plank, hope feet out to hip width apart, then hop in till feet are touching, then bend knees and hop up til heels touch your butt! that’s 3 moves – out, in, hop. go for 1 min. Brutal! Smile

1. left leg back on step, shoulder press up as you lunge down, 2 sets of 10 (10 lb weight)
2. right leg back on step, shoulder press up as you lunge down, 2 sets of 10 (10 lb weight)
3. feet hip width apart, on floor, shoulder press pulses x20! (10 lb weight)

CARDIO: 10 pushup burpees – good luck!

1. Rear deltoid flies, 3 sets of 20 (8 lb weight) – make sure you stay low, chest forward, you’re sitting back, glutes engaged, eyes forward

CARDIO: Hold one of your heavy weights in front of you and come into a plié.  Squat up and down as fast as you can for 1 min!!! this is crazy.

End with 10 min abs of your choice. My arms are still burning from this workout, it is a good one.

I wanted to make up for my lack of healthy living the past 3 days, so I did some ellipticizing before this extreme power flex work out. I love using this time to catch up on my gossip magazines!

Before heading to work, I made myself a deliciously satisfying breakfast consisting of one egg, one egg white with some freshly grated mozzarella cheese, dry whole wheat toast, Pico de Gallo salsa and some freshly brewed coffee to warm me up.

Getting Groceries

After a weekend of eating not-so healthy and a long Monday with lots of stress eating I wanted to get back on track, and there is no better way than stocking up on fresh, healthy groceries. I have figured out a pretty good list of supplies that allow us to make several different meals without breaking the bank.


The total bill was just under $50, not bad  for feeding two people for a whole week – breakfast, lunch, dinner and snacks.




We headed home and unpacked the groceries. Check out the beautiful fruit basket!


Now I just have to get packed up for tomorrow.  I need to get back into my routine. A couple days off and I feel all kinds of out of sorts.

Monday Monday Monday

Last night, I set out my work out clothes, prepared the coffee pot, made my lunch and packed my gym bag so I could get up and go in the morning. But, I had this funny feeling that it was going to be difficult to get out of bed, and I was right. When the alarm went off I did not want to move and I didn’t. oops! I slept through my Monday morning gym ses. However, all is not lost! I did manage to get up in time to go fro a quick run. I like the gym because I can do strength and circuits as well as cardio, but clearly that wasn’t happening this morning. A run is nice and easy when in a time crunch. I just laced up my awesome Saucony sneaks and ran out the door for 30 minutes and was back with plenty of time to shower and get to work.

I ate my oatmeal breakfast at my desk at work. The oatmeal didn’t satisfy so by 10:30am I was starving. I also kind of think it was my lack of interest in work and so my thoughts were going to what I could eat next. Luckily I had some healthy snacks packed. So I munched on a Nutz over Chocolate Luna Bar and 5 unsalted almonds.


For lunch I had some leftovers from the weekend. I had pork loin and wild rice with spinach and lemon. And then I keep a bunch of frozen veggies in the freezer so I threw some frozen broccoli in the mix. It usually defrosts by lunch time and I usually nuk it for a minute or so anyway. It was delicious.


After work, I am going to try to get to the gym and do an additional workout, but I am feeling seriously sluggish today.

Keep Busy

The beauty about being in Vermont for the weekend is Vinnie’s family and my family (aunts, uncles, grandparents, cousins included) are so close. After my 5 mile run today, I walked down the hill to my aunts house. It is less than a 10 minute walk , through the woods. It was a true fall walk with the sun shining onto the fall leaves.


When I got their I was greeted by the two happy dogs.


Stokes got shy on me and hid under the table. I guess I am not such a dog person after all!


Shortly after arriving we decided to go for a walk. Vinnie’s mom, my aunt and cousin’s gf bundled up and walked along the VT dirt roads for a brisk 4 mile walk.


It was great to get that extra bit of exercise today especially after being a snack master all day.  When I got back to find Vinnie doing some yard work. He’s actually trying to fix the weed wacker and leaf blower because neither would work.  What a man!


I even jumped on the lawn mower for a little bit.


Getting outside and doing yard work is a great way to get outside active on the weekends. I find it so easily to get sucked into the couch on. For a 1/2 hour of yard work a 135-lb woman burns around 150 calories. Self.com has a great activity tracker, check it out!
